So lately we’ve been having frustrations finding recipes in my overstuffed dilapidated recipe box. My winter project is to organize my recipes - go through all recipes and pitch the unused ones (one of my favorite hobbies – pitch unused stuff); I’m putting well-used recipes onto the computer and then into a 3-ring notebook. Thus ending frustrating times wasted looking for cookie recipes that somehow end up in vegetables. Or pizza recipes that end up in salads. Not sure how these things happen but they do. Part of this winter project is to post more favorites to this blog so our kids (and I) can always anywhere access them… with pictures if I can get it all together!
And so –
Here’s another family favorite, brought to us by A. Jill’s mom Wilda. Hence its name: Wilda’s French Toast.
Mix:
1 3/4 cup milk
3 eggs
1 1/2 cup flour
3/4 teaspoon salt
1/4 teaspoon cinnamon
Dip bread slices into mixture; fry in hot oil until batter is cooked through. Serve with butter and syrup or jam. Delicious!

Ummmm, yes these are greasy so we drain them on paper towels before eating. Not the healthiest meal by far but it’s ok for an occasional treat.
In other matters -
The snow from yesterday is still here. Today was cold and sunny. Good skating weather.
But.
When it’s warm and the rink is soft, and looks like this, (although most of that snow was scooped off – by hand, as the ice was too weak for the snowplow) and then it keeps snowing and very quickly freezes (which was Sunday night), the result is a snowdrifty type ice that ain’t very pretty. Rougher’na cob, as Kate says. And totally not suitable for skating at all. Time will tell if it’s fixable, either by kids’ efforts or weather changes. Stay tuned.
Anyway, kids have been out every day this week, but only briefly. Crazy, but the snow is too deep for 4 wheeling! I guess it was Monday when they went sledding across the road, and a fine time was had by all – except Josh, who went over the bank into the creek and came home soaked to the skin. Ai yi yi. Thankfully he’s none the worse for his trauma – not even a case of the sniffles from it. Thankfully.

A. Sarah told the kids how to fill a balloon with water and leave it outside to freeze – some pretty neat results! Kate took it a step further and put a rubber band around a balloon.
