Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

French Silk Pie

 
Another recipe I want to remember. I got this from A. Marcia and Candi (not sure who, actually) a few years ago because it was so crazy good. So back then I made it once or twice and wasn't impressed with how it turned out. I don't know what I was doing wrong, but it just wasn't as light and fluffy as I wanted. So I kind of forgot about it...
 

… but Kate didn't.
Now, some of the kids think it's too rich and won't touch it (not me, oh no), but not Kate. The richer the better. She's got a bad sweet tooth for sure. And so this winter she started making these pies frequently. And they've turned out beautifully and are delicious. And I started wondering why she could make them but I couldn't. So I tried again, and it was super quick and easy.
And it was fantastic.
So - - -
here's the recipe.
 
French Silk Pie
small pie crust of your choice, baked and cooled
3/4 cup real butter, softened
1 1/8 cup sugar
5 squares unsweetened Baker's chocolate, melted and cooled
3 eggs
3 cups cool whip
 
Cream softened butter and sugar. Add cooled chocolate and beat well. Add one egg at a time, beating 5 minutes on high speed after each egg. Fold in cool whip. Pour into pie shell. Refrigerate for at least 4 hours. Great to do ahead.

Marchin' On Towards Spring

This goes back to March 11 when Ben turned 17. *Blink* Happy Birthday Ben!
Not to detract from Ben's special day and dessert (a serious thing around here)(dessert)(especially strawberry pie), but that little fellow in Tori's lap is out-of-this-world cute, don't you think? Those adorable eyes just take in life by the bucketful.
 

And this little tyke is always game to try something new. Even Grandpa's specially-made lemonade which is a *little* tart for some people. She loved it.


We missed Kate for a week (kind of) as she joined the HarvestCall effort to rebuild homes in Hardin County, Texas after the devastating hurricanes and subsequent flooding of August 2017. She enjoyed meeting up with old friends, making a few new friends, and doing lots of painting and other such really fun activities.
 
 
 
Back home we got to enjoy these two sweethearts for a couple hours one day.
 

 
'Tis the season for mud around here. Which means the big tractor can't be used to take hay to the bovines, who really do still need to eat in spite of the mud. So for awhile the method of feeding cows/steers was the four-wheeler and its wagon, with kids holding down the loose hay.
 

If you look closely at this next picture, you can see a hooded head to the right of the pitchfork. That's Josh. He's a hard-working farm kid, that one is!

 
Thankfully most of the mud is gone, and, since the frost is (finally) out of the ground, any new rains won't puddle up quite so horribly as they have thus far.
Come on Spring.
 
I have a confession to make.
I like books. I like lots of books. I like children's books, adolescent books, adult books, history books, science books, cook books, how-to books. Fiction and non-fiction. Biographies and autobiographies. Old and new. Actually my favorites are mostly old. One of these days I'll share a few favorites. A few more favorites I mean. Like I used to on this blog, one day a long long time ago. I really did, I think.
Anyway. I digress.
Of all the children's picture books I have (and the number is in the hundreds I'm quite sure), this favorite tyke returns to the same favorite books over and over: our family photo albums.
How neat is that?
 

So let's see. This was a weekend we went to Elgin for a special day with family and friends. March 17 was the day. And we did not know this was in the forecast. Because we only checked the forecast for our area. We all missed the fact that this weather was between us and Elgin. But. Look in the distance - - - blue skies were waiting on the other side of the snowstorm. And once we got through the snowstorm - - -


It. Was. Gorgeous.


Regretfully, I took no px of the sparkly sunshine on the snow-covered land, mainly because pictures couldn't do it justice; but you'll have to take my word for it: it was brilliant and bright and beautiful.
 
And by the time we left for home, there were few traces of the snow left; back home there were none. And that's good. As beautiful as it was, we don't miss it at all. Not at all. We are tired of white stuff. We are ready for green stuff.
Just saying.


Can't remember what day this was but see the slight (very slight) hint of green in the grass? Might have to use your imagination a little...


One Wednesday awhile ago we had quite a crowd. I love this picture. There's just a lot going on that makes me smile.

February Flashback

So how did our year go without a backyard rink? Well, thanks to our Miller Road friends, we survived just fine. Actually the title of this post should read January-February Flashback because skating wasn't limited to February. It was a good backyard rink winter. Kids had lots of good times with friends. Thanks Kochs for all the invites. It's hard to get excited about building one here again when y'all are so willing to share with us! Although certain folks here say we are doing one again next year . . .
we'll see about that :)

Rainy Saturday

Last Saturday Levi's and Jesse's came over for brunch at 10:00. After we ate, we bummed around for awhile, and then we made sugar cookies. Kiowa now LOVES raw sugar cookie dough.
 


 
Then we decorated them. There were some pretty wild-looking cookies! Kiowa mostly ate the cookies. And snitched frosting.


Little Miss Cutie was being such a cheeseball!


 
Levi's didn't turn out quite like he thought it would :)

 
Lucy made the heart, which actually looked very nice.

 
And yes, there were Christmas tree cookies. We're a little out of season:)




 
And that's it! It was a great day in spite of the rain, and we were glad that Levi's and Jesse's were able to come!

Life Lately

There was a week awhile back when Gloria came ice skating with Jewel on the lake a few times. Always good to warm up with hot chocolate afterwards.

Cookie Dough Brownies


Well here we ago again. Another amazingly crazy delicious brownie that I can't keep on hand because my family eats them so fast. Nichole shared this recipe with me and warned me that I'd have trouble keeping kids out of the cookie dough frosting before I got the brownies frosted. She was right. These are ridiculously addictive. If you are on a diet or trying to eat better than we do, don't be tempted to make these. They're bad for you in every way. But if you like to enjoy the little things in life and aren't afraid of a little exercise to work off a few calories, well, give these a try. They are fantastic. Thanks Nichole!
Make a normal 9x13 box brownie mix and let cool completely.
Top with cookie dough frosting:
1 cup softened butter
½ cup sugar
2/3 cup brown sugar
¼ cup water
2 teaspoons vanilla
¾ cup flour
¼ teaspoon salt
1½ cups mini semisweet chocolate chips

Cream butter and sugars until they are lighter in color and very fluffy. Add in water and vanilla and mix for a couple seconds. Add in flour, salt, and one cup of the chocolate chips and mix until all are combined. Spread cookie dough onto cooled brownies and sprinkle remaining chips on frosting.
