Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

Weck Breckela

Way back here I posted this recipe that I got from my cousin Hope. This week I was making it, which I hadn’t done for - - - maybe years? (because the kids usually do it) - - - and Kate informed me that I was doing it the old inefficient way. Trust Kate to invent a way that dirties way fewer dishes!

Here’s the original recipe from Hope -

Weck Breckela

12 ounces bread, diced or broken up in smaller pieces

1/2 teaspoon salt

6 eggs

1 cup milk

Soak bread pieces in milk, egg, and salt mixture. Fry in skillet with a little oil. After you turn it over, chop it up in small pieces as you continue to fry. (The bread can be partly dried, or I just save the crusts and freeze them). Serve with syrup just like you would French toast.

Here it is, as we do it -

Thaw all bread rejects and break up into smallish pieces. Scramble up a bunch of eggs. Mix the two and fry in oil or butter, chopping and turning as bottom is cooked. Serve with syrup just like you would French toast.

And here’s Kate’s brilliant method -

Make sure bag has no holes. This method could get interesting if bag has a hole!

Rip apart bread rejects right in the bag.

Drop eggs right into the bag.

Twist tightly, making sure there’s a good amount of air included with the bread/eggs.

Shake until bread is well coated with egg, adding more eggs as necessary. Dump mixture into hot oil or butter and cook until done.

Happily throw bag into the trash! Don’t worry about wasting the bag, because it was a ratty one to start with (meaning it’s been recycled too many times already) or it wouldn’t have been chosen to hold bread rejects for a month or so.

And that’s all there is to it!

New Neighbors

Saturday brought us a beautiful sunny day for moving Levi & Echo into their very own home!  They (and we and the Sauders) have been working hard to get ready for this day, and I think we’re all glad they’re moved and settled with a few weeks to spare before it’s gardening and mowing time. Spring and summer tend to bring a new busy-ness that we’re all ready to embrace as we also enjoy the sunshine and warmth.

Life

Me ‘n Dad do a fair amount of scrapping around and for once I got him pretty good around the neck. I don’t think it lasted long though until he got away again.

Monday night we went over to Levi&Echo’s house and worked on grouting and scrubbing the tile. The finished product looks great!

Roxy and her kids came for lunch on Tuesday. The kids always have a great time together.

We had a great time babysitting these kiddos last evening. Jesse has really taken a liking to Jack and the feeling is mutual. Jesse was downright being a hog with him. Jacob had a good time getting Henry all wound up though we don’t have any pictures.

This morning we had some more visitors. These four horses were loving freedom and were making the best of it while they had the opportunity. They were way out in the back field looking at Rascal, our horses, and the steers. Idk whose horses they were but after a few minutes they galloped away. Dad texted a neighbor because I know they have some horses but I’m not sure if they were his or not. They were really pretty running around out in the open though wlEmoticon-smile[2] (because I wasn’t the one running my legs off trying to catch them). Hope their owners found them and got them caught before they caused a wreck or something (it’s just not a great idea to let four horses have free range of the countryside!).

We haven’t had much going on lately thus the lag in blogging. Summer is finally on its way. Grandpa has a few rows of veggies out already! Yard is looking really nice and green and we might get to start mowing in a few weeks. We’re hoping it will stay a little cooler for a few more weeks yet so the fruit trees don’t blossom. If they would blossom now there would be a good chance we could get a late frost and there goes all our apples and peaches for this summer.

Calm

It’s been a calm week here at the Kaiser homeplace. Monday brought a sweet Anya, Tuesday brought a delightful summer day complete with an evening thunderstorm (hail and tornado sirens included), Wednesday brought Meg and four sweet little people that I forgot to get any photos of, and yesterday brought sunshine and gorgeous blue skies although it was a bit chilly. Which is good for fruit trees so that is NOT a complaint.

Last night after supper we planted five new fruit trees. Four were replacements for old ones that were more work than fruit (ages ranged from 7 to 35 years old)(some of the younger ones never fully recovered from a few run-ins with mowers over the years). One tree replaced a fire blight fatality.
