Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

Golden Potato Wedges

 Dad has always enjoyed raising potatoes in the garden. This means I always have lots of potatoes on hand. And this means that I'm always on high alert for good potato recipes. 

Good Potato Recipe = Easy + Delicious.

This one fits the bill. It's from Echo, and she shared it with me a long time ago. It's maybe been in my draft folder for awhile😊

Golden Potato Wedges

6 large potatoes

1/4 cup flour

1/4 cup parmesan cheese

3/4 teaspoon salt

1/8 teaspoon cayenne pepper

parsley

dash garlic powder

1/4 cup butter, melted in jelly roll pan

Slice potatoes. Mix next 6 ingredients. In a plastic bag, add potatoes and shake well to coat. Bake 350-400d for 45-60 minutes or until done. Turn once or twice while baking.

So here are my sliced potatoes -


I prefer to use a plastic box to coat the potatoes.


Lay in a single layer on cookie sheets.


Baked and ready to serve.


These are super easy and very easy to adapt to whatever else you're baking in the oven and to however much time you have. I've learned that more time, higher temp definitely makes a better potato - crispier on the outside, tender on the inside. Delicious!

Also, clearly these pictures are of more than 6 potatoes. For about 12 servings, I do 4# potatoes and use 2 batches of the coating, baked in 2 pans. I think. Kind of hard to remember bc it's been a few weeks since I've made these. Guess that means it's time to add them to the menu.
