Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

10-21-10 Teacake

We greatly enjoy Grandma Kaiser’s coffeecake on Sunday mornings, and this week we had it a couple weekdays besides. I LOVE coffeecake with hot tea in the morning – mmmmm; it’s one of the simplest best pleasures of life. One of the kids informed me that, since I drink tea with it instead of coffee, it’s not coffeecake.  It’s teacake. Whatever. Grandma’s coffeecake by any other name is still  delightful.

Anyway.

Routine day of school; boys milked twice and studied in between. Still ANOTHER beautiful fall day – highs in lower 60s, sunny, breezy, just beautiful. Joshua had an ok night – a touch of croup in the early morning, but he wasn’t up a lot like I thought he might be. His nose is running almost non-stop, and he’s terribly stuffed up besides; but he was relatively happy for the most part. He had his times, of course, and he didn’t nap well at all, but being outside helps a lot when little ones aren’t well. I walked with Karol after lunch; then played outside with Sarah, Jewel, and Joshua for awhile before putting Joshua down for a nap. Chores and supper, and then after supper Dad and I zipped down to Emma Aberle’s visitation while kids did dishes, baths, and showers. Bibletime was  Proverbs again; somehow our Proverbs discussion led to Dad and Doug’s adventures when they were younger. We had sore sides from laughing so much!! Too bad AZ is so far away; how we’d love to see them more often. Maybe we’ll have to take a vacation to the Grand Canyon someday…

A recipe to remember ----

Prize Coffeecake

Cake Ingredients:

1 1/2 cups sugar

2 eggs

1 stick margarine, melted

1 cup milk

3 cups flour (we prefer whole wheat, freshly ground)

4 teaspoons baking powder

1 teaspoon salt

Streusel Ingredients:

1 cup brown sugar

1/4 cup flour (we prefer whole wheat, freshly ground)

2 teaspoons cinnamon

1/2 stick margarine, melted

Instructions:

Mix all cake ingredients. In a separate bowl, mix all streusel ingredients.  In a greased 9x13 pan, spread half of the cake mixture, then sprinkle on half of the streusel mixture. Repeat layers. Bake at 350 degrees for 25-30 minutes.  Serve warm.  We make this on Saturday morning for an easy Sunday morning (along with an egg casserole and mixed fruit, smoothee, or applesauce).
