September 2025
Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

10-13-11 Chocolate Declare Cake

Here’s a favorite recipe of ours. It’s a good one to remember.

Chocolate Eclair Cake

1 box graham crackers

3 cups milk

2 small packages instant vanilla pudding

8 ounces thawed whipped topping

Frosting

1 1/2 cup powdered sugar

3 tablespoons melted butter or margarine

2 tablespoons white syrup

2-3 tablespoons milk

5 tablespoons cocoa

2 tablespoons oil

1 teaspoon vanilla

In a greased 9x13-inch pan, place 1 layer of crackers. Combine pudding mix with milk and mix well. Fold in whipped topping. Spread half on crackers. Put second layer of crackers on top and cover with remaining pudding, then end with a third layer of crackers. Mix frosting ingredients and beat until smooth. Spread frosting on top, Cover and refrigerate 1 to 2 days before serving.

Yesterday when Mom got home from serving a funeral meal, there were a couple of pieces of Chocolate Eclair Cake left in the pan that we finished off. A little bit later Sarah and Jewel were talking about it, because Mom & I had made some for us too:

Sarah - “We’re having Declare Cake for dessert tonight.”

Jewel - “It’s not Declare cake. It’s Chocolate Declare Cake.”

Everything is really wet right now, as it has been raining/misting all morning. We’ve been doing school all morning and now we’re starting in on our afternoon jobs. Josh’s nose is still running, but he is still a very happy little boy.

He is even happier when you give him a big tractor with lots of trailers. Even though he doesn’t look too happy here, he is.
