Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

Meatballs Meatloaf

 A few uses for Tough Cowburger beef.

Walnut-sized meatballs -


fried - - -


Then frozen. Nice to have on hand to pull out for a quick supper. 
Great for Sweet & Sour Meatballs (recipe another time perhaps), spaghetti, barbequed, or just plain.

Larger meatballs. Always served with homemade bbq sauce. Not complete without party potatoes, yummmm.


Meatloaf ready for the freezer.


Frozen individually on waxed paper; then bagged for long-term freezer storage. Great to have these on hand to pull out for a quick easy supper.


To my faithful reader from Ohio who had asked about how to feed a hungry crowd - this is one thing I've done for years. I've always made large quantities of meatloaves/meatballs for freezer convenience, and I also cook up ground beef in bulk and freeze in quart boxes. Pretty easy to dump out a quart of cooked beef for spaghetti, tater tot casserole, lasagna, barbeque, or whatever. Bc of the Tough Cowburgers I did quite a bit more this time than ever before, but I do like to share so that worked out fine. I use the same recipe for all meatloaf and meatballs. And salisbury steak! Which I should've done as well but forgot until just now. Oh well. Soon enough we'll be through all this meat and I'll start over.
