Tuesday morning Kate made us waffles with my Mother’s Day gift. A new concept for most of the kids (!!!!!). Waffles were delicious. Thanks, Kate!
Basic Waffles
2 eggs
1½ cups milk
1 tablespoon oil
2 teaspoons baking powder
½ teaspoon salt
1½ cups flour
Beat eggs; add milk and oil, and mix. Beat in baking powder, salt, and flour. Use hot waffle iron. Yield: 6 waffles.
Kittens are still quite popular around here. I’m never sure who takes all the pictures, but of the 17 or so on the camera, I picked out a few.
This was so cute – little guy was cleaning himself on Jacob’s lap and all of a sudden, ZONK, he was sleeping.

Kate has been our chief baker for awhile, although Ben, Sarah, and Jewel take their turns too. Using a Pampered Chef decorating kit, Kate likes to make these pretty cupcakes often. They’re delicious, and because they’re made from scratch and very easy, we always have the ingredients on hand. Time to archive the recipes in the cloud.
Funny Cake
Ingredients:
3 cups flour
2 cups sugar
6 tablespoons cocoa
1 teaspoon salt
2 teaspoons baking soda
¾ cup oil
2 teaspoons vanilla
2 tablespoons vinegar
2 cups cold water
Hand mix until smooth. Bake 350d for 45-50 minutes in greased 9x13 pan. Or bake cupcakes for 20-25 minutes.
Cool. Frost with Charity’s Chocolate Frosting.
Charity’s Chocolate Frosting
Melt 1/4 cup butter in microwave. Add 1/4 cup milk and 1/2 teaspoon vanilla and mix well. Add about 2 cups powdered sugar and 1/3 cup of cocoa powder; mix well. Adjust thickness of frosting to your preference by adding milk or powdered sugar.

And, BLINK, that’s about it for this week. Laundry day, patching day, ortho/Pekin day, errand/Morton/Tremont day, Friday jobs day with a sweet Lainey to help. Not much exciting, but then that’s how we like it. Boring is good.
