Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

11-9-12 Jello Pinwheels

I was a few seconds too slow to get the picture of them washing each other at the same time. Boss is licking Goldilocks.

Last weekend Jennifer brought jello pinwheels to share with us – a delightful twist to plain finger jello. So pretty, so delicious, and so easy!! I have yet to make them, but Kate already has it down to perfection. Thanks, Kate!

Jello Pinwheels

from Recipes to Remember (Renee’s Recipe Collection Volume II, p. 25)

1 (4 serving size) pkg. gelatin (any flavor)

1/2 cup warm water

1 1/2 cup mini marshmallows

Lightly grease 8 or 9 inch square pan. Mix gelatin and water in microwave-able bowl. Microwave on HIGH for 1 1/2 minutes. Stir to dissolve completely.  Add marshmallows to gelatin. Microwave 1 minute or until marshmallows are almost melted.  Stir until completely melted and mixture is smooth. (Creamy layer will float to the top.) Pour into prepared pan. Refrigerate 45 minutes or until set. Loosen edges using knife dipped in warm water. Starting at one end, roll up tightly.  With seam-side down, cut into 10 to 12 (1/2 inch) slices. Refrigerate until ready to serve.

Kate cut ours a little thicker than Renee suggested; a double batch filled a 9x13 pan and made about 15 pinwheels.
