Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

3-29-11 Fried Chicken

Jacob and Kaitlyn invented a novel way to take a spelling test yesterday.

Yesterday I worked on some more sewing projects while the kids did more spring cleaning for me. The laundry room looks TONS better; THANK YOU very much kids!!! They did it all except the bathroom ceiling which I had to do because they’re too short.

Kate did the closet mostly by herself, but Ben helped her finish up the last bit.

Oops. Levi had a little mishap yesterday which resulted in a sprained/strained(?) ankle.

Another project of today – I made 16 cartons of firestarters. That’s it for this winter; we won’t save lint until our supply gets low next winter. Wax melting in boiling water just isn’t a summer project.

Jacob made us a wonderful family favorite for supper tonight…fried chicken, mashed potatoes & gravy, green beans, strawberry applesauce, and deviled eggs (by Kate).

A recipe to remember:

Fried Chicken Coating

2 cups white flour

1 teaspoon celery salt

1 teaspoon garlic salt

1 teaspoon onion salt

1 teaspoon salt

We use some of this leftover coating mix to make the gravy, which not only smells great as it cooks but also tastes wonderful too. Jacob didn’t do the gravy completely solo tonight, but he’s well on his way to rivaling Jesse’s reputation as the best gravy maker in the house…neither Tori nor I can make gravy like Jesse can (but since he’s not on the cooking rotation anymore, our best has to suffice)(and no one complains!).
