Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

Creamed Eggs On Toast

 This is another favorite around here. Although I usually make it for breakfast, certain bottomless pits around here have been known to snack on it at all times of the day. Including when the rest of the household is long sleeping. Which is really fine. No problem at all.

So I made some this week, and some of us were enjoying it for breakfast and commenting on the strangeness of it.

I mean, if you've never heard of Creamed Eggs On Toast, it sounds really odd: thickened milk with diced-up chunks of hard boiled egg mixed in. All served over toast.

Wierd? 

Maybe.

But delicious? 

Definitely.

 I'm curious though if this is an acquired taste... that is, do those who weren't raised on Creamed Eggs On Toast still like it, hmm?

Well, if you try it you can lmk, ok?

Here goes.

Creamed Eggs On Toast

Hardboil 24 eggs, cool, peel, and dice. Set aside.

In large bowl, whisk and set aside: 
8 cups milk
1 cup flour
1 1/2 teaspoon salt
1/2 teaspoon pepper

In large kettle, melt 1 stick butter.
Add milk mixture; cook over medium heat until mixture thickens, whisking frequently to prevent lumps and scorching.

Add diced eggs and mix well.

Toast up a slice of bread; scoop on some creamed eggs, and enjoy!
