Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

3-5-15 Cheesy Hash Browns

Yesterday afternoon we all went out to skate, wanting to take advantage of these last few skating days before melting season hits. Due to the nice ice rain and warmer temps we had yesterday, the rink was naturally zambonied to perfection. Which made skating pretty nice. But the 19* and strong wind made it bitter cold, and my two littlest didn’t last long. So after they got their dose of fresh air for the day, they were back in again while the three bigger kids stayed out a good while longer.

Besides school and jobs and skating and errands and appointments and other such mundane activities, not much is going on here at the Kaiser Ranch, so here’s another recipe I’ve been wanting to post for awhile. We enjoy these with many meals, including but not limited to hamburgers, steak, marinated roast beef, pork chops, honey-grilled chicken, and meatballs/meatloaf. It’s very easy and can be done ahead of time which makes it extremely convenient for a company meal. And did I mention it is delicious?!

Cheesy Hash Browns

Ingredients:

1 can cream of chicken soup (we use homemade)

1 pint sour cream

2 cups grated Cheddar cheese

½ cup melted butter

½ cup chopped onion

1 teaspoon salt

1/8 teaspoon pepper

2# frozen shredded hash browns, thawed

Mix all ingredients together. Grease 9x13” pan. Bake, uncovered, at 350d for an hour or until bubbles in middle.
