Over the years, we've always compared our family life to a wagon train heading west. Just as everyone had to do his part to get to Oregon years ago, so everyone in our family must do his/her part to make our journey through life successful. If somebody climbs in the wagon and lets the others do the work, we just don't make any progress. We all have to pull our weight and work together. Along the trail we find lots of pebbles that make for a smooth ride and some bigger rocks that jar us a little; we hit the occasional pothole that can slow us down. But if we purpose to search diligently, there are countless gold nuggets and precious gemstones along the way as well. This journal is an attempt to preserve some of those precious moments for our children, and our children's children, as together we travel this trail called life.

2-3-11 Chicken Noodle Soup, Blue Skies, and Snow Fun

Chicken Noodle Soup

Start with a kettle full of chicken carcasses (from butchering day) or old hens (that no longer lay eggs). Add celery and onion chunks and a splash of vinegar (I’ve heard it pulls the calcium out of the bones) and cook awhile – the longer the better (the richer the broth).  Carcasses they only need a couple of hours, as the meat is very tender; old hens need at least 4-6 hours or the meat is really tough.

save broth in same kettle to make soup for supper,

and send bones, skin, gristle, and vegetables to the barn for the cats’ feast.

A couple of hours before supper, add 2-3 cups of diced carrots, a chunk of pre-diced and frozen celery (about 1-2 cups’ worth), one diced onion (pretty big), a dash of garlic, a bunch of seasonings to taste, and the meat.

Simmer awhile and enjoy the wonderful smell while you get salads, crackers, applesauce, and fresh homemade whole wheat bread ready. About 30 minutes before mealtime, add about 8  oz. of spaghetti noodles broken into 1-2 inch pieces.

Mmmm – probably our favorite winter meal!

There was too much snow for the 4-wheeler – after watching them get stuck about three times, I made them put it away. They managed to find some new fun and were outside most of the afternoon, although Jewel came in after about an hour. The haybales proved to be quite useful for sledding -

  1. That snow is just amazing. We have had quite a bit this year for TN. We hope to get more cause Dad bought the kids a sled. Your pictures are just beautiful!
