We go through a lot of peanut butter. Plain old Aldi creamy peanut butter. We love it. And so we have a LOT of empty Aldi peanut butter jars that I cannot bear to throw away. And why throw them away? We have found so many uses for them – the best one being to catch fireflies in the summer. No broken jars! Today I found a new use for them. No breakage, and screw-top lids keep tiny hands out of choke-ables but are easy to open for older kids.

Since Dad & I are wimpy walkers and haven’t been walking after supper (too cold, too wet, too dark (not safe either)), the kids have been making sure he gets plenty of exercise. *smile*

- - - it’s almost scary how he copies Levi. Levi lays flat, Josh lays flat. Levi bends his knees, Josh bends his knees, and so on. Josh thinks Levi’s sole job here at home is to play with him. He can be pretty persistent – and ever so cute – Levi seems to adore his little shadow too - - -

Two in a row? Another recipe to remember?
Yep! We’re kind of away from Crazy Crust Pizza lately and have been making this yeast dough crust using Heather’s recipe. Which we LOVE – better than crazy crust and even better than Papa Murphy’s!
Pizza
Dissolve 1 tablespoon SAF yeast in 1 1/4 cup hottest tap water (120 degrees). Let sit 5-10 minutes. Add to dry ingredients.
In dough mixer bowl, place 2 cups white flour and 1/2 teaspoon salt. Add yeast/water; mix at medium speed for 3 minutes, then add 1 1/4 cups more white flour or 1 cup wheat flour (we do both ways and like it either way). Continue kneading 1 1/2 minutes on low or by hand (we use our Bosch). Form into ball. Put 1 tablespoon canola oil in the bottom of a bowl, add the dough ball, and turn ball so oil covers entire ball. Cover and let rise for about 40 minutes.
In 10x15 jelly roll pan, pour a generous amount of canola oil (1/4 cup or so) so entire surface is liberally covered. Press dough into pan and top with spaghetti sauce and other toppings of choice. Bake 450 degrees for 12 minutes.
*We always make double this for two pans which is plenty of pizza for us with some left over for breakfast Saturday mornings. When baking two pans, allow more baking time and switch pans halfway.
Fast, easy, and delicious!! A favorite on Friday nights with all of us.
