Planning & preparations…
Marv donated two hogs, we provided the facilities, and the young people did the work. 7:00 brought men to help with killing, which is not very pleasant so I won’t share those pictures; this photo journal starts with Jacob pulling one of the hogs into the shed.
Hogs were winched up for skinning.
And gutting.
Ladies began to arrive around 8:30 to help with cutting, grinding, seasoning, and packaging. Tori explains how to make seasoning packets.

Flattened packages were boxed then taken outside to cool and wait until delivery.
I have no px of the completed sausage – all 275# or so of it. Boxes of packages were distributed among drivers who had their lists of recipients of whole hog fresh sausage. The place was deserted for awhile while deliveries were made.; meanwhile, back at the ranch we continued clean up and prepared for lunch. For the record – this food line worked well.
